Jim says, "Think pink"!
According to the USDA, smoking meats, such as ribs and pork shoulder, creates a pinkish red ring just below the surface. This is a characteristic of cooking meat over a smoldering fire, in our case, hickory wood. Many people in these parts claim they've never seen this before and to that we say, "You're right." Most of the bar-b-que joints in these parts try to "pull a fast one" by char-broiling or steaming their ribs. But at Jims Famous BBQ, the only thing we pull is pig and the only thing fast is our service. We sincerely hope you enjoy them both.
